Take that Pintrest!



Do you see the above picture???  I made that.  All on my own.  This morning.  EEK!

I took the recipe from Pintrest, as most do these days.

The recipe is as follows:

6 Egg Whites
1 Cup Rolled Oats, dry
1 Cup Cottage Cheese
2 teaspoons Sugar
1 teaspoon Cinnamon
1 teaspoon Vanilla

In a blender, blend all ingredients until smooth. Pour into skillet make as you would normal pancakes.

(I simplified the directions a bit...but come on- they're pancakes, do you need more directions??)

Makes about 10 pancakes; Nutritional info per serving:

181 Calories
2.75 g Fat
10mg cholesterol
361 mg Sodium
20g Carbs
2.8 g Fiber

So, while its healthy, its not really ideal.  I also had a few problems as I don't want to add sugar willingly to my meals as I get that enough when I cheat with my  Peanut Butter.  So I took the liberty of doing some modifications:

6 Egg Whites
1 1/2 Cup Rolled Oats, dry
The rest of the Greek Yogurt I had which wasn't much hence me adding more oats to make it a bit thicker
No Sugar
1 teaspoon Cinnamon
1 teaspoon Vanilla

I then was only able to make 6 pancakes based on a normal size pancake.  I also cheated a bit more by adding butter and a little bit of maple syrup.  BUT - I'm still getting into this eating clean routine again.

Pintrest told me that they would taste exactly like french toast, of that, I can only say that the hint of cinnamon and the texture sure did remind me of french toast.......cinnamon could have been added as a topper to the other pancakes as the last one had the most cinnamon due to the batter settling in the blender.  With that said, all of you people who eat clean, could actually make this 1/2 a cheat meal if you wanted due to the only thing not allowed in your normal diet would be the vanilla.

Either way, I'm thrilled with my current cooking successes and so have the housemates and the boy!

SOOOOOO- tonight is homemade chicken noodle soup.  A recipe I have from my head brought over from the States.  An oldie, but goody as the Winter days are slowly coming to an end here.
