I have learned that "essence" and "extract" are very different things. One is syrupy stuff and the other is like water. Therefore, I shall head back to the shops and purchase not the brand, but the appropriate item.
Next, I made brownies.

Ingredients
- 1/2 cup applesauce
2 small or medium bananas mashed
1 1/2 cup sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded zucchini
2 cups all purpose flour
1/2 cup walnut pieces
Directions
Preheat oven to 350 degrees F. Grease and flour an 9x13 inch baking pan.
In a large bowl, mix together the applesauce, mashed bananas and sugar. Add vanilla and cocoa and mix together. Then add baking soda, salt, and zucchini and mix together. Add flour and walnuts and mix together. Spread evenly into a prepared pan. Bake for 25 minutes until brownies spring back when gently touched.

Firstly, this is more like a cake then brownies, therefore, my disappointment is grave. Although, had I taken the time to read the comments before buying the ingredients, I wouldn't have made it as it clearly states its more of a cake.
I refuse to put these in my mouth (this is why I never baked with my mother,) as I HATE knowing what's in my food.
I should have pureed the zucchini and then perhaps I would enjoy this a bit better....although, to be honest, my mom doesn't puree her zucchini in her zucchini bread so technically, I should be able to enjoy these "brownies" if I would step out of my comfort zone.
Either way, Mat tried them and said, "Surprisingly good for what's in them." Maybe he'll eat them all?
