Long Time no BLOG!
How are you my peeps. So sorry its been such a long time. Fact is; I haven't been very creative with my cooking in the past few months. Today is a chilly Melbourne day. The skies are overcast and the sun only shines through every once in a while. There isn't much wind which is a great thing.
I'm typing this as the boy is upstairs taking a shower after our morning of climbing. We're about to hit Federation square as there is something going on and we're going to explore.

I'm prepping dinner for tonight and it calls for a good ol' fashion American tradition in the winter.We went to the markets yesterday and purchased all of the ingredients we needed fresh from the farm (ish). Winter was a sign of soups and stews. So I'm happy to have my fav, Chili.
I love love love chili. I have NEVER made it homemade though. As I type the fresh dried Kidney beans are boiling away on the stove. I baked an entire thing of garlic this morning (for two purposes).

Here is my recipe. Hope it turns out yummy!
1/2 Pound Ground Beef
2 containers of tomato paste
2 cups of dried (cleaned and boiled) Red Kidney Beans
1/2 chopped onion
1 Cup diced cherry tomatoes
1/2 green pepper
1/2 red pepper
2 Chillies
4 cloves of fresh (baked) garlic
1/2 TBS of Chili
2 tsp ground cumin
1 tsp garlic powder
1 tsp oregano
1 tsp basil
1/2 tsp pepper
1/2 tsp salt (optional)
If you're keen you can use 1 TBS of brown sugar (we didn't use it, but Americans might want it)
After baking the garlic to add to the ingredients, I added all of the items above together to sit while the beans finished boiling.
Then I'll mix the beans with the above and then I'll fill the pan I'm baking it in 1/2 full with water. I'll place in the oven, covered, at 180 C. For 4 hours.
I'll stir every few hours and make sure the levels of the water aren't completely evaporated with the heat and/or sucked into the beans.
When it's ready, I'll top Tim's with sour cream and Cheese and Mine with just cheese.
Let's see how it goes, shall we?
